Product:   Thyme

All deliveries shall comply in every respect to the requirements of the FD&C Act as amended and regulations promulgated thereunder.  In addition, the product shall comply with the following specifications:

 

General Description:  Thyme (Thymus vulgaris, L.) is brownish-green in color with crescent leaves.  Thyme has a fragrant, aromatic odor and a warm, pungent taste.  Color and flavor will vary with origin.  It is commercially produced in Mediterranean countries.

 

Chemical & Physical Specifications:

                   Volatile Oil                          0.8% Minimum (ml/100g)

                   Moisture                             9.0% Maximum

                   Total Ash                         11.0% Maximum

                   Acid Insoluble Ash             5.0% Maximum    

                   Extraneous Material                   Irreducible Minimum

 

The physical and chemical tests shall be performed according to the latest editions of AOAC or ASTA.

 

Storage:      Store in a cool, dry atmosphere to prevent the loss of the volatile fractions.

 

Bacteriological:

                   Aerobic Plate Count                   100,000 count/g

                   Yeast and Mold                400 count/g

                   Coliforms                         100 count /g

                   E. Coli                             Negative in 11 grams

                   Salmonella                       Negative in 25 grams

 

The above specification is to be considered as a guideline only.   Bacteriological specifications:  For sterilized products only.
