Product:   Mace, Ground

All deliveries shall comply in every respect to the requirements of the FD&C Act as amended and regulations promulgated thereunder.  In addition, the product shall comply with the following specifications:

 

General Description:  Mace (Myristica fragrans, Houtt) has a yellowish-brown to reddish-brown color, a fragrant nutmeg-like odor and a slightly warm taste.

                        Total Ash                                   3.5% Maximum

                        Acid Insoluble Ash                   0.0% Maximum

The physical and chemical tests shall be performed according to the latest editions of AOAC or ASTA.

 

Storage:      Store in a cool, dry atmosphere to prevent the loss of the volatile fractions.

 

Bacteriological:

                    Aerobic Plate Count             50,000 count/g

                        Yeast and Mold                     500 count/g

                        Coliforms                               100 count /g

                        E. Coli                                                Negative in 11 grams

                        Salmonella                             Negative in 25 grams
