All deliveries shall comply in every respect to the requirements of the FD&C Act as amended and regulations promulgated thereunder.  In addition, the product shall comply with the following specifications:

 

General Description:  Ginger (Zingiber Offoconale Roscoe) is grown in India, Jamaica, China and Africa.  The rhizome (underground stem) is harvested when it is about a year old.  It is washed and dried in the sun.  Ginger is tan to a pale brown color and has a pungent and biting taste.

The physical and chemical tests shall be performed according to the latest editions of AOAC or ASTA.

 

Storage:   Store in a cool, dry atmosphere to prevent the loss of the volatile fractions.

 

Bacteriological:

                   Aerobic Plate Count             100,000 count/g

                        Yeast and Mold                     500 count/g

                        Coliforms                               100 count /g

                        E. Coli                                                Negative in 11 grams

                        Salmonella                             Negative in 25 grams
