All deliveries shall comply in every respect to the requirements of the FD&C Act as amended and regulations promulgated thereunder.  In addition, the product shall comply with the following specifications:

 

General Description:  Cardamom (Elletaria cardamomom, Maton) has a gray-brown color, a pleasant aromatic odor and a characteristic warm, slightly pungent, lightly aromatic taste.  Guatemalan cardamom has a green color.

The physical and chemical tests shall be performed according to the latest editions of AOAC or ASTA.

 

Storage:   Store in a cool, dry atmosphere to prevent the loss of the volatile fractions.

                   Aerobic Plate Count 100,000 count/g

                        Yeast and Mold                     500 count/g

                        Coliforms                               100 count /g

                        E. Coli                                    Negative in 11 grams

                        Salmonella                             Negative in 25 grams
