All deliveries shall comply in every respect to the requirements of the FD&C Act as amended and regulations promulgated thereunder.  In addition, the product shall comply with the following specifications:

 

General Description:  Allspice (Pimento officinalis, L.) usually known as Pimento outside of the U.S.A., is a native of the West Indies and Latin America. Its flavor can be a combination of cinnamon, nutmeg and cloves.  Allspice is produced in Jamaica, Guatemala, Honduras and Mexico.  It shall be of a dark-reddish color with a strongly aromatic pungent taste.

The physical and chemical tests shall be performed according to the latest editions of AOAC or ASTA.

 

Storage:        Store in a cool, dry atmosphere to prevent the loss of the volatile fractions.

                        Aerobic Plate Count             100,000 count/g

                        Yeast and Mold                     500 count/g

                        Coliforms                               100 count /g

                        E. Coli                                                Negative in 11 grams

                        Salmonella                             Negative in 25 grams
